Beef Meatball & Tzatziki Flatbreads

Beef Meatball & Tzatziki Flatbreads

By: Lisa Holmen

This recipe is the perfect mid-week dinner and is great for the family. Use lean beef mince to make the meatballs a healthier option. I also love adding herbs like parsley and oregano to my meatballs to really lift the dish and give it a fresh flavour. Use fresh, soft flatbreads to roll up and eat.

Recipe

Ingredients

  • 1 tbsp olive oil
  • 500g lean beef mince
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 100g breadcrumbs
  • 1 egg
  • Handful fresh parsley, finely chopped
  • ¼ teaspoon dried oregano
  • Salt & pepper, to season
  • 50g feta, crumbled
  • 200g tzatziki
  • 1 Lebanese cucumber, finely sliced
  • 1 red onion, finely sliced
  • Handful fresh herbs such as parsley & mint
  • Salt & pepper, to season
  • 4 medium-sized flatbreads

Method

  • To make the meatballs, combine all the ingredients (except olive oil) into a medium-sized mixing bowl. Mix until mixture is well combined. Scoop a heaped tbsp of the mince mixture and roll into a ball. Repeat until all the mince is used up.
  • Heat the oil in a large non-stick frying pan over medium heat. Cook the meatballs for 10–12 mins until well browned and cooked through.
  • Top the flatbreads with tzatziki, meatballs, cucumber, onion, fresh herbs and crumbled feta. Season to taste with salt and pepper. Serve with extra tzatziki if desired. Roll up and eat.
